Here's a great PCOS friendly recipe:
1 can tuna in water (6oz)
2 whole wheat english muffins, toasted
1/3 cup light canola mayo
1 1/2 tbsp sweet relish
4 slices reduced-fat cheddar cheese
1/2 tbsp mustard
2 tsp Tabasco sauce (optional)
In a medium bolw combine tuna, mayo, relish, mustard and Tabasco sauce. Mix well. Spread 1/4 of the tuna mixture on each muffen half. Top with two tomato slices and a slice of the cheese. broil 4-5 minutes or until cheese melts.
Makes 4 servings.
