Okay today was a rough day. Probably started early in the morning. I had a hard time sleeping last night. It seems like I woke up every hour. My lower back paid was bad enough that I had to keep getting up just to walk around. I stayed in bed until noon but my back hurt all day.
I hate it when you get that aching pain that you just can't reach. I know it's just a flare up of a cyst but still... makes you hate life. PCOS sucks!
Now I'm tired but can't sleep... aaahhhh! LOL

PCOS Recipe: Tuna Melt
Here's a great PCOS friendly recipe:
TUNA MELT
1 can tuna in water (6oz)
2 whole wheat english muffins, toasted
1/3 cup light canola mayo
2 tomatoes
1 1/2 tbsp sweet relish
4 slices reduced-fat cheddar cheese
1/2 tbsp mustard
2 tsp Tabasco sauce (optional)
In a medium bolw combine tuna, mayo, relish, mustard and Tabasco sauce. Mix well. Spread 1/4 of the tuna mixture on each muffen half. Top with two tomato slices and a slice of the cheese. broil 4-5 minutes or until cheese melts.
Makes 4 servings.
